Ingredients
1/2 lb Lions Mane slice thin and browned on low heat with no oil
1 shallot, small dice
2 tbsp olive oil
2 tbsp chicken stock
2 tbsp heavy cream
1 oz blue cheese crumbled
1 cup cooked pasta
2 cup washed and chopped fresh spinach
1 twig fresh or 1 tsp dried thyme

Instructions
1. Brown mushrooms lightly.
2. Add oil and shallots and stir until shallots are clear.
3. Add seasonings, stock, and spinach and stir till spinach is wilted.
4. Add cheese and stir until blended.
5. Cook until most of the moisture is gone.
6. Stir in pasta, cream, and pasta water until desired consistency is reached.
7. Serve with grated parmesan.

Suggestions and substitutions:
Add some chopped garlic to the shallots.
Add a spoonful of mustard with the stock.
Add a pinch of nutmeg with the spinach.
I slightly undercook pasta and finish it in the pan. I used fiorelli but any kind is probably fine.
Don't forget the spinach like I did lol.
