Ingredients
½ lb oyster pink or blue oyster mushrooms
2 tbsp low sodium soy sauce (or tamari or coconut aminos)
2 tbsp maple syrup
1 tsp liquid smoke
1 tsp smoked paprika 
1/2 tsp garlic powder
½ tsp onion powder
½ tsp salt
1/2 tsp black pepper (toasted)
1 tbsp oil (suitable for high smoke point)
Directions

1. Tear pink oyster mushrooms into a strips or bite size pieces
2. Prepare the marinade, combine soy sauce, maple syrup, liquid smoke, smoked paprika, garlic powder, onion powder, salt and pepper in a large bowl.
3. Add the oysters to the marinade and coat well. Let them marinate for 5-10 minutes. 
4. Preheat and oil a large pan on medium-high heat.
5. Fry batches of single layers of mushrooms for about 5 minutes. 
6. Let rest on a plate before consuming, they will finish cooking and crisp up after 5 - 10 minutes.  

Pro Tip: Marinate overnight in a jar to increase the flavour. It's also possible to use your air fryer, set it to 400 degrees F, aim for 8-10 minutes, shaking half way through.
